I know that I need to eat better and admit I haven’t been. I’m not eating bad but I wonder if I’m eating enough? When I was doing LA Weight Loss I was eating 1200-1400 calories a day, and I was losing weight. I’m sure I’m not eating that much now, or if I am it’s not the same balance that I used to.

I’ve been looking up freezer cooking last night and earlier today. I found a couple of yahoo groups and signed up, hopefully at least one will be good and I can follow along. We are going grocery shopping this weekend after I have a list of either freezer meals, regular meals to cook or a combo of both. I would love to do freezer cooking – can you imagine a freezer full of food that all you have to do is pop it in the oven or microwave! That sounds like something so great to me.

I’ve already found one great breakfast food – basically a mcmuffin type thing but I’m sure oh so much better then Mcd’s. Chris is usually running around in the morning and I would love to send him off with an actual meal rather then a couple of granola bars. I can’t wait to get started – who knew that cooking would be so exciting.

I talked to my Mom who mentioned that her Dr. said vitamin B can give you hot flashes….which is just what my Dr. gave me for the morning sickness! And I’d like to know why she didn’t mention the hot flashes! I’ve had one every day or every other day – not that bad when you look at it I suppose, but annoying nonetheless. I’ve been able to skip taking the vitamin every other day this week which hopefully means I will be able to quit taking it all together pretty soon which means no more hot flashes! Just the regular heat and humidity.

Chris made chicken wings tonight – they were SO good! I was surprised I could eat them – when I was pregnant with the other two I couldn’t eat spicy or greasy foods. But the wings were too good! We also made steaks but I was too full to eat any more. Hopefully it will still taste good tomorrow when I reheat it!

It has been so hard to stick to eating healthy. I can start out fine in the morning, and most of the time for lunch. But by the time the afternoon comes around I want something dessert’y, something chocolate, something sweet. I need to find alternate snacks, so far I’ve had brownies, chocolate and those 100 calorie snacks. Then of course that messes up dinner and I’m not in the mood to cook or eat. Today I did great, I ate a snack but also ate dinner. Of course after dinner I had a piece of ice cream cake!

I’m interested in once a month cooking. I love the idea of spending a day of cooking and getting a bunch of meals ready. I went to a Dream Dinners that did just that – they set up stations and  you get the food ready in freezer ready containers. I did it a couple of times but after that it wasn’t worth it for me – my husband really eats a lot of food. If he were gone, working, I think it would be fine for just the kids and I. So cooking for a month – or even two weeks – at a time seems like a good way to go. Especially on days when I don’t feel like cooking, when it is too hot out, when we are starving and don’t want to take the time to cook, etc.

I looked for a book at the library, but amazingly enough they didn’t have even one cookbook geared toward once a month cooking! I plan on asking a librarian the next time, but I doubt I’ll find one. I can’t wait to do this and might even have a friend come over to have her do cooking for her family. We’ve talked about it before and I’m sure doing it as a team would make it go faster.

Since we have been grocery shopping every week to ten days I can’t wait until the area farmer’s markets open up. Of course they are starting to open now and since we are still relatively new to the area, I wanted to find as many as possible so I could make a trip and find which one I like the best.

Enter the new farm website – complete with searching by zip code! I found an organic farmer, his website and it also said hey I sell at your local farmers market – which was great because it also linked to my local market, one of which is downtown (30 or so minutes) vs 15 minutes away. That is okay with me, taking a trip downtown to go shopping and have a picnic would be great to do every week. Completely fresh veggies here I come!

My first Menu Plan Monday! I’m excited. I am an avid reader of “I’m an organizing junkie” and have been reading the menu plans on her site for quite a few weeks now. I figured I should jump right in!

Monday: Omelets w/ veggies and cheese
Tuesday: Teryaki chicken (low sodium sauce), veggies, rice
Wednesday: Chicken w/ one of the Ms. Dash seasonings, not sure on the sides yet
Thursday: Leftovers from lunch or dinner on the other days (or spaghetti – depending on what the husband wishes)
Friday: Enchiladas w/ homemade red sauce (a friend is sharing her recipe!) (or leftovers)

Being on the LA weight loss plan means you only eat certain amounts of certain foods. I’ve been sticking to the same foods over and over again. I’m okay with that, it’s easy to fix, it tastes good and it’s fresh food. The farmers markets in the area have started and I can’t wait to go shopping.

But over the weekend I did bad. I didn’t stay on plan and didn’t get any exercise – well according to myfooddiary.com (LOVING that resource!) I exercised off 605 calories yesterday by doing two hours of vigorous housework. We power cleaned the house yesterday after the plans were changed from going to the park with friends to everyone coming to our house.

Not staying on the food plan was so not a good idea. I feel groggy today, my sleep schedule wasn’t normal and I know I will pay for it on the scale. I’m drinking tons of water today to hopefully help combat the salty foods I ate yesterday.

I’ve always tried to do meal planning for my family. It works well for our budget and I don’t like just eating whatever or wanting something but realizing it is frozen!

I haven’t done very well as meal planning for the past week or so. Ever since I started with LA Weight Loss basically. But tonight I am sitting down and planning our meals for the next week. I need to do this tonight because tomorrow I am doing my weekly shopping. I just recently decided to start shopping once a week – I need to since I need fresh fruits and veggies. I’m actually excited to do my planning!
